VERONA  When Samantha Willcutt was an undergrad student at Mississippi State University, she waited tables at an upscale restaurant called The Veranda, eventually working her way up to manager.

.

She saw how really good food made people happy, but she wanted a more intimate setting, so after graduation, she went to work for Zoes Kitchen, which specialized in made-from-scratch, fresh, healthy Mediterranean-type fare.

.

I traveled around the country, opening new restaurants and managing them for a while, said Willcutt, 37. I was reading about nutrition all the time and what food was doing to my body and other peoples bodies. I wanted to push myself to learn more.

.

So, after 10 years in the restaurant business, Willcutt headed back to MSU and earned a masters degree in nutrition in 2016.

.

While I was getting my masters, I did a graduate assistantship in the Office of Nutrition Education at MSU Extension, she said. It was a nice combination of learning about nutrition and helping people. Thats when I said, Yep, this is for me.

.

In October 2016, Willcutt became one of three regional dietitians Extension hired to help in the fight against obesity and chronic disease in Mississippi.

.

The state has the second highest adult obesity rate in the nation, according to “The State of Obesity: Better Policies for a Healthier America” released in August 2017. Mississippi’s adult obesity rate is currently 37.3 percent, up from 23.7 percent in 2000 and from 15 percent in 1990.

.

Willcutt oversees the northeast region of the state. Two others came on board this summer: Kaitlin DeWitt oversees the southeast region and Juaqula Madkin manages the southwest region. The northwest position hasnt been filled yet.

.

Through the Office of Nutrition Education, they oversee Extensions Supplemental Nutrition Assistance Program Education, or SNAP-Ed. They work with SNAP-Ed nutrition educators in county offices to help coordinate efforts to teach low-resource families ways to improve their diets, increase physical activity and manage their food resources.

When Sylvia Byrd was hired as the director in 2015, she brought a new attitude to the SNAP-Ed program, said Willcutt, a Starkville native. She didnt just want us focused on education. She wanted to expand the efforts and implemented PSE  policy, systems and environment  all moving parts that work together. Policy influences the system, which changes the environment.

A friend of mine is trying to lose weight and wanted to check whether her strategies were sound. She said she counts every calorie, avoids nuts because of the high fat content and snacks only on sugary (but fat-free!) foods. Was she on track?

.

If that conversation took place in 1993, she’d get kudos for her nutrition knowledge. But those bits of wisdom are badly outdated. Nutritional science changes quickly, and knowledge that was gleaned from a 25-year-old nutrition textbook needs to be refreshed. Here’s how nutrition information has changed over the years and why it’s important to keep up.

Weight loss was explained very simply in nutrition school: You’ll lose weight by cutting calories from food and increasing calories burned through exercise. That’s it – just eat less and move more. Obesity was blamed on laziness and overconsumption.

Now we know that obesity is more complex than that. It involves genetics, physiology, activity level, environment, diet and socioeconomic status. Plus, researchers are heavily studying how obesity relates to hormones such as leptin and ghrelin, which are not even mentioned in my 1990s textbooks. In 2017, we aim to treat obesity as a disease and not lay blame on the people who have it. And we still don’t have all the answers to the weight control riddle.

In fact, we don’t have a lot of answers about nutrition, which is considered a relatively new science. The research evolves as humans evolve, and today’s theory may not carry weight tomorrow. It will be interesting to read this article in 25 years to see the progress we’ve made.

Your child is in the thick of the game, running her heart out in a race with an opponent to chase down the ball. Suddenly, that opponent throws an elbow, striking your daughter in the temple. Your daughter crumples to the field, lying motionless for what seems like an eternity. The referee stops play and you and her coach rush to her side. She appears dazed, but is alert and able to count the fingers held up by her coach. She walks to the sideline without assistance and you think all is well.

Then she surprisingly asks you what the score of the game is and why she is on the bench, followed by complaints of dizziness, headache and feeling like the sun is too bright. You consider concussion, but recall that she didnt lose consciousness. You remember an article that instructed when in doubt, sit them out until further medical evaluation if concussion is suspected.

A visit to the local urgent-care center reveals that your daughter has, in fact, suffered a concussion and should rest until she feels better. You are given a sheet with red flags that would warrant a trip to the ER if they occur over the next 24 to 48 hours (unequal pupils, cannot be awakened, severe headache that worsens, slurred speech, weakness, numbness, decreased coordination, repeated nausea/vomiting, seizure, unusual behavior, lost consciousness) and are told that you do not need to wake her every hour to check on her symptoms.

The International Concussion in Sport Group estimates that 33 million children and adolescents internationally sustained a concussion in 2016. In the United States, an estimated 1.1 million to 1.9 million sports-related concussions occur each year in patients aged 18 and younger. Adolescents, in particular, are at significantly greater risk and are estimated to be five times more likely than other age groups to sustain an injury. In addition, loss of consciousness is no longer a reliable indicator of concussion, since it occurs in less than 10 percent of injuries. Recovery estimates vary, ranging from a week to a month or more in youth athletes.

First, find a concussion specialty clinic that offers a multidisciplinary approach to management. Concussion is a multifaceted injury with post-injury complaints ranging from physical, cognitive and emotional to sleep-related symptoms. Each patient will experience concussion symptoms differently.

Next, ask the medical team how they plan to prevent any potential negative outcomes during concussion recovery. Your childs provider should work with you, your child and your family to construct a comprehensive, symptom-relevant set of accommodations within the first week of recovery. This should include a coordinated plan to work with school personnel in implementing, monitoring and adjusting support recovery in the academic setting.
